I say ‘problems’ because being forced to bake to use up excess eggs isn’t really a problem. But it is a challenge for sure!
We get a dozen eggs each week and we need to eat more eggs, because right now we have 25 farm-fresh cage-free responsibly raised eggs. And that’s a lot!!
Tonight: chicken soft tacos- using spinach, tomatoes and 2 peppers from last week’s CSA.
Tomorrow: stew- using tomatoes, potatoes, squash and beans from the CSA and carrots from the home garden.
Friday: appetizers and leftovers
Weekend: pasta with veggies (we are working hard on the office and gardens so easy is a must!)
Monday: fish burgers- using corn and green beans from the CSA
Tuesday: omelettes- eggs and all remaining veggies
